As we told you earlier this summer, Edible is on the Road and Chef Plum is in the driver’s seat. This video—episode one of Edible on the Road—offers a first look at his journey. In it, he stops by Montauk Brewing Company, where he chats with singer-songwriter Ryan Star and Montauk Brewing Company co-founder Vaughn Cutillo about the brewery and its place in the Montauk community. Then he whips up some beer-battered fish tacos.

Chef Plum’s Beer Battered Fish Tacos
Beer Batter
- 6 ounces Montauk Summer Ale
- 1/2 cup flour
- 1/4 cup cornstarch
- 1 egg
- pinch or two of salt
- 3 filets of fresh local fish
Mix together flour salt and starch (sift together if possible, if not use a whisk to mix to avoid lumps). Whisk egg and add to flour mixture and mix together, add the beer and whisk. Slice fish into thick strips. Dredge the fish in the flour and dip into the batter to coat thoroughly. Gently drop into fryer and dry until crisp. Remove and place on paper towel-covered plate. Serve with Chef Plum’s basic salsa.
Chef Plum’s Basic Salsa
- 3 medium tomatos, diced
- 1 cup cilantro
- 1 small onion, diced
- 1 small jalapeño, diced
- 2 tablespoon lemon juice
Combine all ingredients and season.
