Jeannie Calderale, treasurer of Slow Food East End, dug up beautiful sweet potatoes from her garden to make a sweet, savory and gluten-free latke.
Sweet Potato Latke with Smoked Fish
Ingredients
2 large sweet potatoes, grated
1 large leek, thinly sliced.
2 eggs
4 tablespoons of gluten free flour
1 teaspoon of salt
1 tablespoon of grated ginger
Peanut or canola oil
2 tablespoons of fresh dill
1 cup of sour cream
Garnish:
Smoked fish on top of fresh dill cream sauce.
Directions
Grate the sweet potatoes and thinly slice the leeks. Place both in ice water, strain and place on towel. Squeeze as much water out as possible. In a large bowl add the leeks and sweet potato. Then add the eggs, gluten free flour, salt, and ginger. Mix and drop by tablespoon in hot oil. Flatten with spatula. When lightly browned, flip and cook until slightly browned.
