News flash from 8 Hands Farm, which we covered this summer, via owner Carol Festa: USDA lamb cuts will arrive next week and will be available for purchase on weekends, starting Dec. 21, from 10 a.m. to 4 p.m.  The farm is at 4735 Cox Lane in Cutchogue. Those interested in specific cuts can order ahead by e-mailing carol@8handsfarm.com. They will have loin roast, rib roast, chops, ground, shank, shoulder roast, whole leg, breast, riblets as well as organ meat.

From Carol: “Our lamb is processed in a USDA-inspected facility in Rhode Island. Having our lamb processed by a USDA facility permits us to sell our lamb by the cut, otherwise, we are restricted to selling the live animal to you for processing. All lamb is aged for three days and then cut and packaged in Cryovac to ensure freshness. Cryovac allows you to see the quality of the cut you are buying and provides an effective way to freeze and store your meat to preserve its freshness. In addition to lamb, we also have pasture raised, certified organic fed, heritage breed chicken eggs available for sale along with many great wool products, felted soaps, and sheep horn jewelry for the holidays.”
