First Course
Cromesqui of foie gras, chanterelle mushroom ragout and juniper butter

Second Course
Great South Bay oysters on the half shell and pickled shallots

Third Course
Roasted Long Island striped bass, tomato fondue, red wine butter sauce, bacon crisp and potato confit

Fourth Course
Ballotine of local duck, duck and cabernet reduction, apple-scented risotto and summer truffle shavings
