Fans of the Riverhead Project will be thrilled to hear of a new hire: executive chef Roy Wohlars. Wohlars plans to use inspiration from Long Island’s farms and waters to integrate original recipes into the restaurant’s menu. Wohlars’ experience ranges from Bouchon Bakery in Manhattan to South Edison in Montauk, and most recently he assisted chef Zak Pelaccio at his new restaurant Fish & Game in Hudson, New York.
Inspired by the bounty of Long Island, Wohlars’ recipes include a cardamom braised pork belly with rhubarb puree, smoked bluefish pierogi with pickled ramp, spaghetti alla chittarra with crab and pomodoro sauce, and Crescent Farm duck breast with king oyster mushrooms.
