Last year, we profiled Monte Matthews, a former ad exec, with a penchant for good pork who launched Monte’s Ham out of his Sag Harbor home. The hogs were a heritage breed, raised and packed Upstate, and the hams–with their thick, flavorful skin and juicy meat–came ready to eat with Matthews’s own award-winning glaze. I bought one for my parents and the whole family enjoyed it on Christmas, New Years and for a few weeks into the New Year–keeping the meat under a clean cloth and taking slices for sandwiches, salads, omelets or snacks.
