The Milk Pail on Montauk Highway in Water Mill is one of the few South Fork farm stands open year round. That’s because their main crop comes in the fall and keeps through the winter. It’s also because that crop lends itself to perfect cold-weather foods, including cider, cider donuts and pies. In an elegant and ancient form of outsourcing, the Milk Pail delivers peeled and cored apples—processed on the farm with an ingenious hand-cranked machine (demonstrated below by Jenn Halsey)—to Breadzilla in Wainscott where empty crusts, sugar, cinnamon, and Maria Morocho are waiting.
