Comment | July 29, 2011 | By

Roxanne Browning, the chocolate sommelier, will be on the North Fork twice in August to give seminars on matching wine and chocolate.

On August 14 2 to 4 p.m. Browning will work with Tracey Ellen Kamens of Grand Cru Classes where they will teach a Classic Wines and Artisan Chocolate pairing class. The fee for the class is $75.

The wines will start with a California Zinfandel, Italian sparkling wine, Sauternes, and end with two wines from Portugal, Madeira and a Ruby Port; they will be paired with handcrafted chocolates that represent the Amazon region, the Far East, and two island nations – Madagascar and Cuba. Tracy’s focus is on the diverse classic wine regions, from vine to wine, while Roxanne will share chocolate making from bean to the bar. Expect samples.

On August 28, Browning will be at Laurel Lake Vineyards conducting a chocolate tasting that will pair with the winery’s new releases. Tickets, $30, will include a barrel tasting and guided tasting of four wines and complementary chocolates. The program runs from 1 to 2 p.m. Seating is limited, call 631-298-1620 to reserve.
