Like the elusive porgie in this issue’s Out to Sea feature, the John Dory is a little known delicacy that frequents our waters, but is often enjoyed by diners elsewhere. It’s remarkably flat (a device it uses to sneak up on prey), but yields perfect filets. This particular fish was photographed by Montauk artistfisher Annie Sessler on a bed of ice in a van-cum-studio with a blue interior that created some otherworldly colors. Ask for its brethren at your seafood shop.
